Wojciech Popow, Head Chef
Heading up the Japanese Grill is Wojciech Popow, whose stints at leading international restaurants have allowed him to craft an innovative gastronomic approach with extraordinary attention to detail. He gained his foundation of knowledge and skills working for Gordon Ramsay and Noma and then went on to become deputy chef at one of London’s best restaurants, Yashin. He is the founder of the Polish Association of Sushi Chefs and winner of the prestigious global Sushi Awards 2014. In 2018, he was awarded second place in the Washoku Challange at Le Cordon Bleu, and in 2019 went on to take the lead position as winner of the challenge. At Beaverbrook’s signature restaurant, the Japanese Grill, he offers an elegant menu of delicately flavoured sushi, sashimi, and nigiri and the finest cuts of meat and fish from the Josper grill for a remarkable dining experience. He is passionate about combining foraged fermented and garden grown ingredients with Japanese fare, and his signature dishes include the Toro Tartar with Yuzu Miso and Fresh Truffles; Charcoaled Wagyu with Juniper Miso and Sansho Pepper; and Turbot Nigiri with Wood Ants and Marigold Oil.
